White Hart’s style objectives: to make a rendition of their experiences, reflecting the soul of wine growing and the early days of immigrants who were the pioneers that built the foundation of the industry. This means wines that are sophisticated in regard to the flavors of the fruit, and very simple in regard to the flavors from the winery. Not over-extracted, over-oaked, or over-handled. White hart believes that today’s winemaking tools keep getting better and better, but there is a tendency to treat them like toys. They believe that these tools are like double-edged swords, and should be used carefully. Used correctly, they help them achieve consistent quality that used to be so hard to attain.
White Hart focuses on Pinot Noir and Chardonnay, because they’ve always enjoyed these varieties. Also, they think that more than other varieties, the Pinot Noir and Chardonnay varieties show how far they’ve come in California.
